Burgers are a big ‘dill’ around this place – here in Brighton we have a number of well-known burger joints, battling it out for not only ‘Best Burger in Brighton‘, but also ‘Best Burger in the UK’ too! So it was only fitting that Asda held an event for National Burger Day in Brighton.
We met at Brighton station and were met by two yellow Big Lemon buses! As you can see, I got on the second bus with this lovely lot!
And here’s some of the motley crew, including me! (don’t worry, I cut my fringe soon after as it kept messing up, and a shorter fringe is better for me!
So we got the the buses, and then we were whisked away to a mystery location (a house in Woodingdean, which you can actually rent on Airbnb) and when we got there, we found a marquee with massive BBQs, chefs, a jazz band, and awesome people serving us Pimms, gin fizzes and soft drinks.
Onto more pressing things, the food…

- Halloumi Burger
- Peach and Mushroom Burger
- Lemon Sea Bass
- Barbecued Salmon

So much deliciousness to try! We also had sides and Eton Mess to finish! Yum.

We left the lovely house, stuffed to the brim with delicious food, having made an re-enforced friendships with other Brighton bloggers. It was great to be able to put the real life, human face to the Twitter handle! There are some wonderful people here in Brighton, and some of them are bloggers! I love being a blogger in Brighton, there’s a lovely, growing community down here.
With burgers on the minds, I thought I’d share with you my twist on Jamie Oliver’s recipe for ‘The Best Vegan Burger‘ – so if you’re Vegan, Vegetarian, or an Omni who doesn’t fancy meat, it’s a great one, with my added twist!
The Even Better Vegan Burger
By Tea, Cake and Make
Prep time: 30 minutes to cook (plus chilling time)
1 x 400 g tin of chickpeas
1 x 340 g tin of sweetcorn
½ a bunch of fresh coriander
½ teaspoon paprika
½ teaspoon ground coriander
½ teaspoon ground cumin
dash of hot sauce of your choice (Tabasco, Cholula or similar)
zest of 1 lemon
3 heaped tablespoons plain flour, plus extra for dusting
1 small round lettuce
2 large ripe tomatoes
4 buns, rolls, bagels or similar of your choice
- Drain the chickpeas and sweetcorn and put into blender/food processor (I recommend putting the chickpea water aside, so you can use it for aquafaba and make Vegan meringues, mousse and more!)
- Add half of the coriander leaves to the food processor
- Add the spices, lemon, flour, salt, spices and hot sauce to the processor, and pulse until all the ingredients are combined… you don’t want it perfectly blended though – leave a bit of chunk in for texture!
- Dust your surface with flour and divide the mixture into 4 patties which are about 2 cm thick
- Pop the patties onto a baking tray and leave in the fridge for around 30 minutes so that they’re nice and firm!
- Heat some oil in the frying pan of your choice! When the oil is hot, add your patties to the pan for 10 minutes, turning as and when necessary for an even cook. Once golden brown, transfer to kitchen roll to remove excess oil
- Toast your rolls of choice and spread guacamole (home made, of course!) on both sides of the inside of the roll (Makes it taste so, so much better!). Add a patty and as much lettuce and tomato as you want.
