I love a good biscuit and Hob Nobs are one of my favourite types. However, I sometimes find them a bit too salty and dry. Whilst on the Moneysavingexpert Old Style board many a year ago (I don’t go on there as often any more) I found this awesome recipe for Hob Nob style biscuits and I thought that I would share it with you!

I make these biscuits at least once a week and have made a number of varieties. The favourite type in this household is spicy, which is where I add cinnamon, allspice and nutmeg to the mixture before baking. We also like to add coconut to the mixture and sometimes dip the bottoms in chocolate!

Here is the recipe, I usually double it and split it into two when it’s time to add the extras aka the things that give the extra flavours!

Vegan Hobnob Biscuit Recipe

Ingredients

8oz self raising flour
8oz sugar
8oz porridge oats
8oz margarine
1tbsp golden syrup
1tbsp hot water
1/2 tsp bicarbonate of soda

(makes up to 36 small biscuits or 12 large)

And here is the method that I use…..

Put the flour, oats and sugar into the bowl

 Melt the butter and golden syrup over a low heat and then add the hot water and stir in the bicarbonate of soda

Pour the butter mix into the dry ingredients and if you want to add flavourings such as spices, chocolate chips, cooconut or anything else you fancy, this is the time to do so.

Roll the mixture into balls and then squish them down a little. Pop them onto a greased tray and into an oven preheated to 180 celcius. Bake them for about 15 minutes, until light golden brown.

When the biscuits are golden brown pop onto a cooling rack and try to leave to cool before eating… or at least slightly cool! Then enjoy 🙂
