1 clove of garlic (crushed)
1 teaspoon hot smoked paprika
1/4 teaspoon cayenne pepper (optional)
6 cloves
1 teaspoon chopped dill
1 teaspoon fennel seeds
1 slice of lime plus the juice of one lime
1 teaspoon mustard powder
6 tablespoons tomato ketchup
3 tablespoons white wine vinegar
3 tablespoons water
3 tablespoons maple syrup or vegan honey
1 teaspoon vegan Worcester sauce or Henderson’s Relish
1 teaspoon soy sauce

Method

Sweat the onion and garlic in a tablespoon of olive oil over a medium heat until translucent.

Add the bay leaf, smoked paprika, fennel seeds, slice of lime, white wine vinegar, water and mustard powder. Stir and bring to the boil. Then simmer for about 10 minutes or until the liquid has halved in volume.

Add the ketchup, maple syrup (or vegan honey), soy sauce, dill and vegan Worcester sauce. Stir again and bring back to the boil. Then simmer until it reaches your desired thickness. Taste and add salt, pepper or extra lime juice to taste. If you wish the sauce to be hotter, add the cayenne pepper.

  1. Wow, this looks lovely. I love BBQ sauce! I am veggie and had no idea Worcester sauce isn't veggie-friendly! Oops, oh well I'm not too strict with things like that, for me it's the fact I don't like meat so it's ok 🙂
