So yesterday I shared with you the recipe for home made pulled pork and today I thought that I would share the recipe for the BBQ sauce that accompanied it. There are lots of different types of BBQ sauce out there, including a plethora of recipes, but this one is so good that I thought that I might as well share it for you all to dip veggies in – speaking of veggies, this can be made vegetarian friendly by using vegetarian Worcester sauce or omitting it altogether. I was sent the soy sauce by Kikkoman and this is an entry to their fab challenge that I mentioned yesterday.
Home Made BBQ Sauce Recipe
1 onion (chopped)
1 bay leaf
1 clove of garlic (crushed)
1 teaspoon hot smoked paprika
1/4 teaspoon cayenne pepper (optional)
1 teaspoon chopped dill
1 teaspoon fennel seeds
1 slice of lime plus the juice of one lime
1 teaspoon mustard powder
6 tablespoons tomato ketchup
3 tablespoons white wine vinegar
3 tablespoons water
3 tablespoons honey
1 teaspoon Worcester sauce
1 teaspoon soy sauce
Sweat the onion and garlic in a tablespoon of olive oil over a medium heat until translucent.
Add the bay leaf, smoked paprika, fennel seeds, slice of lime, white wine vinegar, water and mustard powder. Stir and bring to the boil. Then simmer for about 10 minutes or until the liquid has halved in volume.
Add the ketchup, honey, soy sauce, dill and Worcester sauce. Stir again and bring back to the boil. Then simmer until it reaches your desired thickness. Taste and add salt, pepper or extra lime juice to taste. If you wish the sauce to be hotter, add the cayenne pepper.
